When ambient air in Lagos routinely hovers between 30°C and 34°C with outdoor relative humidity above 85%, natural dough fermentation undergoes rapid acceleration. In an uncontrolled kitchen, commercial yeast spikes enzymatic activity, digesting fermentable sugars in under 45 minutes and producing an overly acidic, dense, and fragile loaf.
To combat this, the central facility in Lekki operates three dedicated cold-retarder chambers maintained at an exact 8.0°C (±0.5°C). By cooling the dough mass gradually over 72 hours, we suppress wild acetic fermentation while allowing lactic acid bacteria to build nuanced flavor compounds and pre-digest complex starches.
Every dough batch is subjected to digital core temperature logging during shaping, retardation, and oven load. Batches that exceed 9.5°C during bulk rest are quarantined and excluded from consumer distribution.
The Stone Hearth Baking Cycle
Baking takes place on heavy refractory stone decks heated to 250°C. High-pressure dry steam is injected into the deck chamber during the first 90 seconds of the bake. This condenses onto the cold dough surface, keeping the crust elastic and allowing maximum volumetric expansion before gelatinization sets the crust.
The resulting blistered, deep amber exterior seals in moisture, granting our sourdough a naturally extended shelf life without chemical preservatives.
