72-Hour Wild Fermentation

Natural Acidification & Crumb Digestibility

Commercial bakeries accelerate bread production using industrial yeast concentrates and calcium propionate, producing bread in under 90 minutes. This leaves complex gluten proteins intact and difficult to digest.

At Bowmaker, every loaf begins with our proprietary wild sourdough mother. We employ an autolyse rest followed by 72 hours of staged bulk fermentation at 8°C. This allows lactobacilli bacteria to break down phytic acid and pre-digest wheat starches, creating a deeply caramelized crust, a moist, open crumb, and naturally low glycaemic impact.

16°C Cold Lamination

Cultured Butter Micro-Layers

Croissant dough requires absolute thermal synchronization between dough elasticity and butter malleability. If the butter warms above 19°C, it absorbs into the dough, destroying flakiness. If it drops below 14°C, it fractures.

Our pastry production room is maintained at a continuous 16°C. We fold 84% butterfat cultured French butter through 27 geometric layers. The result is an explosive oven-spring and honeycomb cell structure that yields a light, crisp bite.

Food safety at Bowmaker is governed by strict protocols. We maintain positive air pressure in production suites to prevent airborne contamination.

Every single item in our catalog is formally evaluated across all 14 statutory allergens. Flours containing gluten, sesame seeds, and tree nuts are segregated into hermetic storage bins with dedicated utensil sets to prevent cross-contact.
